Reply Inaccurate John C. Hi David, I used this for the first time almost a year ago and haven't used it since. Let me tell you that you don't really need to use it, or if you do, just use a tiny bit. It's a nutrient for yeast to feed from, so it is not needed in the beginning.

The yeast will feed off the sugar. Perhaps it would be of use when the yeast has consumed all the sugar and stopped bubbling. I was silly and added it to a batch of apple cider along with 2 cups sugar and yeast. After a few hours, it had popped the airlock out and spewed apple pulp all over the ceiling!

So I would not recommend you use it in the fermentation period. It might be of benefit after the first racking. As for ginger beer, I've made many batches love it!
